These yum yum bars and bites are a favourite in our household to have as a snack or to top yoghurt or porridge bowls with.
Our yum yum bars are rich in vitamin E and magnesium which support the health of our nervous system and therefore may support everyone to stay a little bit more regulated; as well as containing fibre to support those little microbes that live in our guts.
You can really add anything to adjust the flavours of these bars but are favourites are:
Cookie dough - traditional and always a winner
Chocolate brownie - adjust the recipe by adding in 1/2 cup cocoa powder
Carrot cake - adjust the recipe by skipping the chocolate chips, adding 1/4 cup raisons, 1/2 cup grated carrot and 1 tsp. cinnamon
Peanut butter cup - adjust the recipe by swapping almonds for peanuts - and you can always dip them in chocolate too!
Ingredients
2 cups almonds
2 cups datesÂ
3 tbsp. coconut oil (melted)
1 cup oatsÂ
1/4 cup dark chocolate chips (we love these ones)
1/4 cup white chocolate chips
Method
We keep it simple here.
Soak dates in boiled water for 20-30 minutes if using dried dates
Place the almonds and coconut oil in a food processor (we use the Sage one and we love it!) and process until they are like a fine flour.
Add dates, oats and melted coconut oil to the almonds and process until combined. Add chocolate chips and pulse for three pulses just to combine well.
Line a tray with greaseproof paper and press mixture into tray
Leave in the fridge for an hour, cut and enjoy
