Cookie Dough Yum Yum bars

These yum yum bars and bites are a favourite in our household to have as a snack or to top yoghurt or porridge bowls with.





Our yum yum bars are rich in vitamin E and magnesium which support the health of our nervous system and therefore may support everyone to stay a little bit more regulated; as well as containing fibre to support those little microbes that live in our guts.


You can really add anything to adjust the flavours of these bars but are favourites are:


  • Cookie dough - traditional and always a winner

  • Chocolate brownie - adjust the recipe by adding in 1/2 cup cocoa powder

  • Carrot cake - adjust the recipe by skipping the chocolate chips, adding 1/4 cup raisons, 1/2 cup grated carrot and 1 tsp. cinnamon

  • Peanut butter cup - adjust the recipe by swapping almonds for peanuts - and you can always dip them in chocolate too!


Ingredients


  • 2 cups almonds

  • 2 cups dates 

  • 3 tbsp. coconut oil (melted)

  • 1 cup oats 

  • 1/4 cup dark chocolate chips (we love these ones)

  • 1/4 cup white chocolate chips


Method


We keep it simple here.


  1. Soak dates in boiled water for 20-30 minutes if using dried dates

  2. Place the almonds and coconut oil in a food processor (we use the Sage one and we love it!) and process until they are like a fine flour.

  3. Add dates, oats and melted coconut oil to the almonds and process until combined. Add chocolate chips and pulse for three pulses just to combine well.

  4. Line a tray with greaseproof paper and press mixture into tray

  5. Leave in the fridge for an hour, cut and enjoy
